Have leftover shrimp cocktail or just need a healthy appetizer? This fully-cooked Weight Watchers version of shrimp ceviche is quick to assemble and have ready in minutes.
1 cup (approx. 1/2 lb) chopped shrimp, raw* or cooked
1/4 cup red onion, chopped
1 small tomato, seeded and diced
1 small kirby cucumber, diced
1/4 cup fresh lime juice
2-3 Tbsp cilantro, chopped
1/2 jalapeño, minced (optional)
Salt, to taste
Black pepper, to taste
In a medium bowl, combine shrimp*, onion, tomato, cucumber and lime juice; let stand 10 minutes for flavors to blend. Sprinkle with cilantro; season to taste, if desired.
*For raw shrimp, marinate the 1 cup chopped shrimp in 1/4 cup of fresh lime juice (or enough juice to cover shrimp). Let marinate for 15 minutes.
