Old Bay-Roasted Shrimp Cocktail

A simple way to quickly cook up a shrimp appetizer without having to boil. You can easily change up the spice to anything that sounds tasty!

ingredients

2 lbs shrimp
2 Tbsp olive oil
1/2 tsp Old Bay Seasoning*
Salt and Pepper (to taste)

directions

Preheat the oven to 400˚F. Peel and de-vein the shrimp but leave the tails on. Place the shrimp on a large rimmed baking sheet in a single layer. Drizzle over the olive oil and Old Bay. Season with a little salt and pepper and toss well to coat each shrimp. Bake until the shrimp are pink, firm and cooked through, about 8 to 10 minutes. Serve with good cocktail sauce.

*Try additional seasoning next time as it was bland. Also can use whatever seasoning in place of Old Bay.
