Rosa’s Granola

We received this recipe from a friend who enjoyed this amazing granola at The Inn of the Five Graces in Santa Fe, New Mexico and then made a few tweaks. Absolutely delicious when served with yogurt and fresh berries.

ingredients

4 cups old fashioned oats
1/2 cup coconut oil
1/2 cup honey or light agave nectar
1/2 tsp salt
1/2 tsp cinnamon
1 cup shredded coconut (sweetened or unsweetened)
1 cup sliced almonds (unsalted)
1 to 1-1/2 cups of dried blueberries, cherries or cranberries or a combination

directions

Melt coconut oil in microwave for about 20-30 second.  Then, add coconut oil and honey in large measuring cup or small bowl.  Add salt and cinnamon to oil and honey mixture and mix. Place dry oatmeal in a large bowl and pour the oil, honey and seasoning mixture into the oats and mix thoroughly by spatula until they are blended as evenly as possible. Allow the oats to soak for approximately 2 hours to allow the oil and honey mixture to penetrate the oats. 

Preheat the oven to 325˚F. Spread oats on parchment paper on a large tray and bake for 25-28 minutes turning once halfway. Set aside to cool. 

On another tray, spread the shredded coconut and the almonds on parchment and bake for 10-12 minutes turning once halfway, until very lightly browned. Set aside to cool.

After everything has cooled, mix both trays together. Add the dried fruit of your choice and mix one final time. Store in sealed container. Enjoy on top of yogurt with berries, with milk or just as a tasty treat. Makes a great snack on the go!
