This corn side dish gets amped up with red pepper and a bit of chili powder for a nice full flavor.
1 cup corn
1-1/2 tsp olive oil
1 large sweet red peppers, chopped
1/4 cup onion, chopped
1 garlic clove, minced
2 Tbsp fresh parsley, minced
1/4 tsp salt
1/4 tsp chili powder
1/8 tsp pepper
- In a large skillet, heat the oil and cook the corn for about 2 minutes.
- Add the red peppers, onions, and garlic, and saute for 4-6 minutes.
- Stir in the parsley, chili powder, salt and pepper and cook for another minute or two.
